Mother's Day 2012

This year for Mother's Day, we didn't do anything grand. Just dinner on Saturday night with the Rosas side of the family because Jeremy and mum had work on Sunday. On Saturday we had a family BBQ at my cousins place with my side of the family. We also had a bonfire in the backyard to heat ourselves up since it was such a chilly night.

It was a good weekend to just be together with family. I would have loved it even more if my night didn't end as it had.

On a happier note though, I finally broke the news to my family! Which you will all soon find out!

As for presents, on Friday night I came home to a box of beautiful tulips and on Saturday, my sister Hariette dropped off my present which were Roses Cake Pops. I've also got another present from Jeremy that he was supposed to give but is still pending lol.

Chocolate Cheesecake Brownie

My brother & sister-in-law requested something chocolate to eat for dessert for our Mothers Day get together. I linked them a picture of a chocolate cheesecake during the week and since that method took too long, I just looked for a different recipe that was similar and so I decided on this.

Ingredients:
  • Melted butter (to grease) (I microwaved a thin sliced piece for 30secs. in a little tub)
  • 150g butter
  • 300g good quality dark chocolate
  • 3 eggs
  • 1 cup caster sugar
  • 1.5 cups plain flour
  • 1/4 cup sour cream
  • 1x 250g cream cheese (easier to whisk at room temperature)
Method:
  1. Preheat oven to 180°C. Brush a cake pan with the melted butter to lightly grease. Line the base with non-stick baking paper, allowing it to hang over the sides.
  2. Combine the butter and chocolate in a small saucepan over low heat. Cook, stirring until well combined mixture is smooth. Set aside for 5 minutes to cool down. Transfer chocolate mixture in a large bowl.
  3. Whisk 2 eggs in a small bowl. Add 2/3 cups caster sugar and whisked eggs in chocolate mixture, and stir to combine. Add flour and sour cream, stir and combine until well combined.
  4. Using an electric mixer, beat cream cheese and remaining (1/3 cup) sugar in a bowl until smooth. Add remaining egg and beat until just combined.
  5. Spoon the chocolate mixture in the pan, then adding the cream cheese on top. Use a skewer to create the marble/swirl effect and to mix it together.
  6. Bake for 30 minutes or until a skewer inserted into the centre comes out clean. Set aside for 1 hour (I only did 30 minutes). * Best served with Ice cream.

    Mothers Day

    Happy Mothers Day to all my Mama friends & family all over the world!

    We didn't have anything major planned but a family gathering on Jeremy's side at home to watch the Pacquiao vs Mosley fight over a KFC lunch. I personally didn't like the fight, I thought it was pretty boring compared to Pacquiao's other fights but at least he still won. I was glad we didn't have any plan on going out because I was suffering from a hangover and still a little sick/nauseous too haha (post found here).

    After the fight, my cousin and her kids wanted to come over to visit Jaiden but since our place was already crowded with the in-laws, we just headed to Starbucks for a little 'chill out' over coffee. I didn't mind going there since it was just around the corner & not doing anything but sitting down & sipping on coffee. Though I was still a little out of it because I ordered something completely off from what I had in mind.. it just didn't come out right for me lol. Jaiden just wanted hugs from me, I guess because he didn't know/recognise his cousins since they hardly see each other. He was okay with one of them though, Dennis.. I think because he was over not long ago & they were playing together.

    Afterwards, Jaiden & I got dropped back home and Jeremy & I started making our meals for dinner. Jeremy bbq'd some ribs and sausages, while I baked Chocolate Cheesecake Brownies (recipe coming after this post). I got to use my new mixer that Jeremy got me as my present and I love it! I can't wait to whip something else up with it.

    Overall, it was a very chilled and a family orientated day. Just what I needed and wanted. Here are some photos;
